| We are proud to offer you our ancestral Espadín mezcal. Celebrating the sacred traditions of our village, Sola de Vega, Oaxaca, we roast the highest quality Espadín agave for distillation in a clay pot still. Our Espadín mezcal displays rich minerality with notes of avocado leaf, fresh herbs, flowers and citrus. Mezcal Type: Joven 100% Agave. Cooking: Earth oven, using wood and river stones. Milling: Hand smashed in Sabino wood canoes Fermentation: Open / Natural in wood vats with wild yeasts and spring water. Distillation: Double in Clay Pot Still. Region: Sola de Vega, Oaxaca. Nose: Complex, herbal and floral. Herbal notes of avocado leaf, fresh pine and juniper are complemented by Chinese orange and royal lime, cooked agave and piloncillo and a hint of wet earth. Palate: Smooth palate mirrors the nose and is further nuanced by dried fruit, pistachio, pine nut and a subtle olive note. |
